Sweet Potato Protein Brownies
Ingredients
- 2-3 large sweet potatoes
- 2-3 scoops of whey protein powder
- 1 tsp of baking powder
- 2-3 TBsp of coconut flour
- 1-2 TBsp of Xylitol or Stevia
- 3-4 TBsp of cacoa powder
- 1/3 cup of coconut oil
- 1-2 TBsp of flaxseeds (soaked)
- 2-3 scoops of whey protein powder
- 1 tsp of baking powder
- 2-3 TBsp of coconut flour
- 1-2 TBsp of Xylitol or Stevia
- 3-4 TBsp of cacoa powder
- 1/3 cup of coconut oil
- 1-2 TBsp of flaxseeds (soaked)
Instructions
1. Preparation- Preheat over to 180 degrees celsius
- Boil the sweet potatoes until soft. Sieve and peel them after
- Mash until no solid lumps in mixture
- add dry ingredients
2. Mix away
- Mix in coconut oil & seeds
- Combine the mixture until thick & fudge like texture
- Pour onto a lined baking tray
- Press down with a spoon or spatula to ensure mixture is compact
3. Final Stage
- Bake for 20 - 25 minutes
-Wait to cool before you serve else they will crumble
